Before you have the chance to meet Pablo, head chef and owner of Cox Hanal Mayan Cuisine, you’ll smell his cooking! Pablo has been a professional chef for decades, from fine French cuisine to mouthwatering BBQ, Pablo can do it all. When the restaurant where he was head chef closed unexpectedly, Pablo decided to start his own food truck that would feature the dishes he grew up eating in the Yucatan region of Mexico. A few years later, Pablo took a chance on the Rockwood Market Hall to build on his dream of building a legacy for his kids. Pablos’ passion for food is in every bite, from hand picking the best avocados to hand shredding chicken, he cares about every ingredient that goes onto your plate.
